King prawns and tomatoes in white wine.

A really good meal to have on a special night without breaking the calorie or carb bank. Goes a treat on courgette spaghetti.
Uses the standard Tesco raw Jumbo King Prawn pack for easy shopping.

Ingredients

• 1 large, Onions, raw
• 2 clove, Garlic, raw
• 25 milliliter, White Wine
• 1 tbsp(s), Oil - Olive
• 175g, Jumbo King Prawns
• 100 g, Baby Plum Tomatoes

Method

Finely chop the onions and crush the garlic and chop that finely too.

Roughly chop the plum tomatoes and if you don't like them discard the seeds, personally I leave them in.

Heat the oil and fry the onions and garlic until they are clear.

Add the tomatoes and fry for a couple of minutes.

Add the wine and bring to a bubbling boil. Turn down and simmer until the tomatoes are beginning to cook.

Add a little water if too dry and put the raw prawns into the mixture. Cook until the prawns are all pink, about 2 minutes. Add black pepper to taste, it will need no salt.

Serve on courgette spaghetti. Enjoy.
