Kale Slaw

A slaw made with kale instead of cabbage. It is a family favourite.

Ingredients

• 2-3 cups uncooked kale leaves, stripped off the stems
• 1-2 tablespoons mayonnaise
• 1/2 lemon
• 1 teaspoon Mirin
• 1/2 teaspoon olive oil
• 1/2 teaspoon rice vinegar
• 6 drops sesame oil
• squirt of hot sauce
• 1 teaspoon sesame seeds

Method

Wash and dry the Kale, and cut the leaves into fine shreds.

For the dressing, combine the mayo, juice from the lemon, mirin, olive oil, rice vinegar, sesame oil, and hot sauce. Mix well.

Pour over the kale and mix to coat all the leaves.

Sprinkle the sesame seeds over the top.

You can vary all these ingredients to taste, but the mayo, lemon and the sesame oil are important as they provide the base flavour. Most of the calories come from the mayo. If you don't have any Mirin, its still good without it. The Mirin just adds a bit of sweetness.
Some people like to add shredded carrots or celery, but I prefer just the kale. Try and find smaller kale leaves as they are more tender, but the bigger ones are OK too.
The kale can be stripped easily off the stems by holding the stem in one hand and pulling the thumb and finger of your other hand up the stem, stripping off the leaf.
