Tasty and filling Prawn Stir Fry

Ingredients

• 300g Chopped cabbage
• (or cabbage and leeks, 150g each)
• 10 Cherry tomatoes (100g)
• 200g of fresh Spinach
• 1 Packet (340g) frozen Large cooked and pealed Prawns
• 100g small sweet peppers, approx. 3
• ½ an onion
• 2 tbsp Extra Virgin Oil
• Sprinkle of Chilli Flakes
• ½ tsp Paprika
• Dash Soy sauce

Method

Defrost the prawns, Place 1 tbsp of the oil plus the chilli flakes and paprika in a pre-heated Wok then add the Onion, Tomatoes and Peppers, stir fry turning regularly until just starting to soften then add the prawns and spinach, cook for a further 4 minutes or until the prawns turn brown, turn out into a pre-heated oven dish and place in the oven to keep warm.
Place the remaining tbsp of oil in the same wok and stir fry the chopped cabbage/cabbage and leeks until it wilts around 4 minutes, season with the Soy sauce and serve with the previously cooked prawns etc.

    Used the cabbage and leek combination – a good substitute for the usual noodles… next time we will add garlic and 🍄

    Loved this an found it very filling. I also used the leek/cabbage combo.
