Fish pie

Fish pie with a cheesy cauliflower mash topping

Ingredients

• 250g white fish (cod haddock)
• 50g prawns (frozen)
• 1/4 pt skimmed milk
• 1 leek finely chopped
• Chopped parsley salt n pepper
• For the mash
• 1 cauliflower
• Knob of butter
• salt pepper
• A little parmesan cheese

Method

Method
Sweat the leek in a pan with spray oil until softened
Add the fish, milk and parsley with salt pepper to the softened leek and simmer for 5 mins.
Add the prawns and simmer for a further 5 mins with lid on
Drain the fish but keep a little of the fish liquor
Place the fish into an oven proof dish
Spoon over a little of the liquor
For The Mash
Cut the cauliflower into florets and cook until really soft about 20 mins then drain in collander
Mash the cauliflower with salt pepper and knob of butter with back of a fork
Spoon over the fish and run fork over to make furrow lines
Sprinkle over parmesan cheese and place fish pie in hot oven for 20 mins gas 5 /160f
Remove from oven and brown under grill if needed
Seve with peas carrots for a delicious filling Dinner

    How many carbs are there per portion? When I entered it on My Fitness pal it came out at 28.7 carbs. I may have made a mistake but that is too high for me as I am on a maximum of 20 per meal on medical advice
    ADMIN. It would be useful if recipes included carb count
