Not low carb, but at least it’s oat based – for those days when you need a bit of comfort food.
• 1 Staffordshire oatcake (not the biscuit kind!)
• 1 egg
• teasp. butter
Beat the egg on a dinner plate
Soak both sides of the oatcake in the egg
Heat a teaspoon of butter or oil of choice in a frying pan
Pour the oatcake and any leftover egg into the frying pan
Cook one side, flip and cook the other side.
If you can spare the calories, you can optionally sprinkle a little grated cheese on and fold over.
Also goes well with grilled tomato, bacon or sausages as a brunch.
