Egg & salmon stuffed avocado

Quick and easy – Tasty avocado stuffed with tasty salmon and a tasty egg


• 4 avocados
• 4 oz smoked salmon
• 8 eggs
• Salt
• Black pepper
• Chili flakes (optional) & Fresh dill (optional)
• or
• 20g chives


Preheat oven to about 210°C.
Halve the avocados and remove the seed. Scoop out a little more if needed (the hole needs to be big enough to hold an egg.
Arrange the avocado halves on a baking tray, and line the hollows with strips of smoked salmon. Crack each of the eggs into a small bowl, then spoon into the avocado, the yolks and however much white you can fit in.
Add salt and fresh cracked black pepper on top of the eggs, to taste.
Gently place the baking tray in the oven and bake for about 15-20 minutes.
Sprinkle chili flakes and fresh dill on top (or finely cut chives).
Serve warm.

(If you'd prefer the avocado cold, cook the eggs separately then assemble everything)
