Drea’s Baked Prawn Peppers

Like an omelette in a cup


• 1 bell pepper
• 2 egg
• 100g prawns
• 25g grated cheese
• 2 tbsp soured cream
• Sprinkle of paprika or cayenne to taste


Halve the peppers, add the egg.
Place in small ramekin or bun tin to stop them tipping.
Dry fry prawns (or just add to the top of the egg).
Bake peppers at 200C for 20-30 mins depending how well you like your egg cooked.
Add prawns of you didn't already do so.
Spoon over the cheese and return to oven to melt.
Add soured cream and paprika, season and serve.

Can split into two with salad for snack or lunch.
