I enjoyed it more with the addition of slightly more oil and lemon juice and generous amounts of coriander. Also delicious with fish, eggs, halloumi or feta cheese , though more calorific.
The traditional Cypriot white bean salad is served with super-food greens such as rocket, coriander, parsley and lettuce instead of green beans. I like Salad Niçoise hence the replacement of green beans. On the 5:2 diet I usually add a boiled egg but we must keep the calories down.
• 90g Cooked white beans
• 100g Tomatoes
• 100g Cucumber
• 100g Frozen green beans
• 50g Onion
• 13g Olives
• 5 ml Olive oil
• 5ml Lemon juice
• Salt & pepper
1. Cook the frozen green beans in boiling water for 5 minutes
2. Chop your tomatoes, cucumber and olives
3. Dice your onion
4. Add your beans and chopped vegetables in a serving bowl
5. Add salt, pepper, olive oil and lemon juice and toss
