Creamy Cauliflower & Bean Soup

Naturally creamy soup with no cream! Packed with protein and vegetable goodness, this soup is healthy and filling at the same time.

Ingredients

• 1 tablespoon Olive Oil
• 1 clove garlic
• 1 onion, chopped
• 1 carrot, chopped
• 500g cauliflower florets
• 3 cups chicken (or vegetable) stock
• 400g tin Cannellini Beans, drained and rinsed
• salt & pepper to taste

Method

1. Over a medium heat sauté onion and garlic until soft but not brown
2. Add chopped carrot and cauliflower to pot
3. Add stock to cover
4. Bring to the boil. Cover and reduce to simmer for approx 20 minutes or until cauliflower is soft
5. Add beans and heat through
6. Using a stick blender pulse until smooth and creamy
7. Serve hot

    Excellent! Very tasty – definitely will make again, may try some mace or nutmeg with it next time. Had one portion for lunch and three individual portions went into the freezer for the future.

    I liked this soup very much. Super (or perhaps that should be Souper!) texture/consistency, and so much more sustaining than just vegetable soup. I will certainly make it again. Orchid’s suggestion of adding in some nutmeg sounds good. I am sorry I didn’t have time to take a photograph – I was too busy watching the golf on Sunday evening.

    I think it would also be nice adding some fresh parsley and a sprinkling of parmesan cheese.
    I may this for lunch and added 3 teaspoons of curry powder, a squeeze of lime and some fresh coriander and it was delicious.

    I made this today and it was delicious. Very thick and filling. I may experiment a little next time, maybe a bit of curry powder or parmesan cheese as suggested by others, but still very happy with it as it was written down in the recipe. Definitely being added to my permanent recipe list.

    I haven’t tried this yet but intend to. I have a similar recipe for leek and cannellini bean soup which makes a great substitute for leek and potato. Looking forward to trying this one – and all the variations.
