Creamy Cauliflower & Bean Soup

Naturally creamy soup with no cream! Packed with protein and vegetable goodness, this soup is healthy and filling at the same time.

Ingredients

• 1 tablespoon Olive Oil
• 1 clove garlic
• 1 onion, chopped
• 1 carrot, chopped
• 500g cauliflower florets
• 3 cups chicken (or vegetable) stock
• 400g tin Cannellini Beans, drained and rinsed
• salt & pepper to taste

Method

1. Over a medium heat sauté onion and garlic until soft but not brown
2. Add chopped carrot and cauliflower to pot
3. Add stock to cover
4. Bring to the boil. Cover and reduce to simmer for approx 20 minutes or until cauliflower is soft
5. Add beans and heat through
6. Using a stick blender pulse until smooth and creamy
7. Serve hot

    My first meal on the BSD, I added a little more water and some chilli flakes, then 20grams of chorizo sausage fried crunchy as suggested in the recipe book for and extra 60 cals, very tasty ! Good start to the next 8 weeks, looking forward to trying lots of new recipes.

    Totally love this soup but have worked out the calories to be less by having 400 gm cauliflower adding more stock and lots of chilli flakes, then making 5 potions so the count according to mfp is 125 per potion I then fry and add 20grams of chirzo it’s fab.
