Tasty but needed longer in the oven than stated.
A recipe I made up in attempt to replace pasta bake when the family are having it, a little high in carbs at 26g but very nutritious and filling.
• 1 courgette
• 2 spring onions
• 1 chilli
• 1/4 green pepper
• 50g butter beans
• 1 cup passata
• 30g cheese
• 1 tsp mixed herbs
chop the onions, pepper, chilli and add them all with the beans, passata and herbs to an oven dish, mix through. Add extra seasoning or spice if you like.
I used the chunkiest blade to spiralise the courgette, then add to the rest and stir through.
Cover with foil and bake in the oven for 20 mins at 180, then remove foil, add grated cheese and bake for a further 10 mins.
