Courgette & Tomato Soup

A light soup to help clear the vegetable drawer.

Ingredients

• 1 tsp olive oil
• 1 onion (chopped)
• 2 courgettes (diced)
• 2 cloves garlic (minced)
• 1/2 tsp turmeric
• 1 tin tomatoes (or you could use 400g fresh)
• 1 litre vegetable stock

Method

Pour the oil into a large saucepan and cook the onion and courgette for about 5 mins. You might need to keep stirring to prevent it from catching as there is little oil.
Add the garlic, turmeric and tomatoes, then sluice out the tin with stock to get all the tomatoes out. Add the rest of the stock and simmer for 30 minutes. Blend with a stick blender.

(I added 30g mozzarella to my serving as a treat but this does double the calorie content!!)

    Just made this recipe, smells and looks nice. i added a little hot paprika and black pepper as i wanted a warmer flavour. Thanks will let you know later. Mark

    Scrummy for my lunchtime soup. I chopped my veg so small that I didn’t feel the need to blitz it. I also added a tiny pinch of chilli flakes for a bit of warmth. I loved it and I will be making it again. Thank you.

    I’ve renamed this back-of-the-fridge-soup!! I only had one courgette so I chucked in a celery stick and a carrot, and um, rather a lot of chilli and ginger as well. The result was spicy… I had to add cream cheese to cool it down a little! Very good though, and will be doing this again – wonderful in this cold weather and costs relatively little. Could be adapted to almost any veg you’ve got knocking around the fridge. Warm, filling, cheap – what’s not to love?!
