Courgette pepper curry

Vegetable Curry that doesn’t break any rules.

Ingredients

• 2 courgettes 1 inch pieces sliced
• 1 Green Pepper 1 inch pieces sliced
• 2 Tablespoons Olive Oil
• 1/2 teaspoon Cumin seeds
• 1/4 teaspoon Mustard seeds
• 1/4 teaspoon Garlic powder
• 1 tablespoon Coriander
• 2 tablespoons yogurt
• Pinch of Cayenne pepper
• Squeeze of lemon
• Salt to taste

Method

Put Olive oil on medium heat in large frying pan or Wok
Add garlic powder.
Immediately add cumin seeds and mustard seeds til they pop.
Add courgettes and peppers. Cook 5 minutes.
Add yogurt til mixes in.
Turn heat low and add coriander,
Cayenne, lemon squeeze and salt to taste.
Should be yummy.

    Sorry..calorie count only 100 not 150. I miscalculated.

    This will be really useful as a side dish for when we have guests and don’t want to break the diet.
