Chilli Prawn Curry

Adapted from Dr Rajsingh’s mother’s recipe. A delicious tangy prawn curry. Easy and quick to prepare. Serve with steamed green veg.

Ingredients

• Large Raw Prawns (250 gms) (175 calories)
• 2-3 Cloves garlic
• I large onion (200 gms) (60 calories)
• 1-2 pieces of Cinnamon
• Oil (1tsp, 15mls) (45 calories)
• Chilli powder ½ tsp
• Turmeric powder ¼ tsp
• Tamarind paste 1 tsp
• Salt to taste

Method

Marinade Prawns with ½ tsp chilli powder and ¼ tsp turmeric powder and ½ tsp tamarind paste. Leave for 30 minutes.
Chop onions into small squares.
Add 1tsp oil to a non-stick pan. When hot, add the garlic, and 1 cinnamon stick. Add the chopped onions and sauté to medium brown on medium heat. Add 2 cups of water and salt to taste, a pinch of chilli, the turmeric powder and cook on high heat till the water begins to reduce.

Now turn the heat to low. Add prawns and cook till the prawns change colour and the gravy begins to thicken.

Stir occasionally. This will need 10-15 minutes till cooked and ready to eat.

    This will be my first recipe to try. I don’t eat meat but do eat fish and I adore curry. I live just outside Bradford so you can see why curry is my downfall! Found some of the recipes in the book a bit ‘middle’ class so am searching for more regular style meals. Chomp n!

    This was so easy to make and delicious. I made Chickpea Flour Flatbreads and had one with this meal. Put the rest in the freezer. Filling and satisfying meal.

    Just made this tonight for my wife and adult son and daughter whom dont have Type 2, and we all LOVED this! Thanks for the recipe, I also paired it with the Chickpea flour flatbread recipe as well, brilliant!!
