Chickpea flour flat breads( gluten free)

Can be used as pizza base, fill them with veggies or spread with low fat tuna spread etc

Also as a flatbread, high in protein

Ingredients

• Chickpea flour ( Besan) 9oz
• Water( enough to make a thin batter)
• Olive oil- 1 tbsp
• SeasoningI use chilli flakes, celery seed, pepper, onion powder, choose your own to taste

Method

Put chickpea flour in bowl, add enough water to make a thin pancake batter whisking well as you go

Add seasoning , and then leave for 2-3hrs, when ready to use whisk in olive oil

Heat frying pan on medium heat, if not nonstick lightly brush with olive oil

Swirl batter into pan , and cook till brown and crisp, turn over and cook the other side

Freezes well

    These are absolutely amazing, versatile and so easy to make! Tried them for the first time yesterday with spicy chicken and salad – managed to get 10 from the batter. My daughter (who has now joined in on the diet) loved them, as did my hubby who absolutely hates anything chickpea – and he wants the same again this eve in for tea lol.

    These chickpea flour pancakes are brilliant.

    Have had them with vegetables, chicken, beef sausages and even with a little honey for tea. They are so useful if one is coming home late, and the mixture is already prepared in the fridge – into a hot frying pan with it. These pancakes are great at helping to fill the carbohydrate-sized hole in my meals. Highly recommended. Give this recipe a try.

    Made with onion seeds, veg masala, a little salt and pepper. Very tasty and perfect as a chapati replacement. I think I’ll try with cocao nibs next time and add a little erythrotol to make a sweet version.
