Chickpea Chilli

A quick and easy to make vegetarian chilli, perfect with some green veg.

Ingredients

• 1 medium onion
• 1clove of garlic
• 1 tspn olive oil
• 1 green chilli (more if you like it hot)
• 1tin chickpeas
• 1 tin tomatoes
• 1 red pepper
• 1 carrot
• 2 sticks celery
• Half tspn dried basil

Method

1. Sweat the onion in the oil, cook for 5 mins
2.. Add the carrot, pepper and celery, cook for further 10 mins
3. Add the garlic, chilli, tomatoes, basil and chickpeas. Cook until hot.

    Store cupboard ingredients except the green chilli so I substituted with chilli powder. I added sea salt and ground pepper to season, yummy. Very moreish.

    This looks delicious. Bu to get the calories correct I need to know the size od the cans please. I usually use fresh produce and loose chick peas that I soak rather than cans. TIA.

    Excellent! Easy to make. And you can add or substitute veg depending on what there is in the veg rack, just count the calories. I added courgette and butternut squash, which meant I had enough for three servings.
