Chicken and red pepper curry

Just yummy!

Ingredients

• 200g chicken breast
• 1large onion
• 2red peppers
• 30g cashews or almonds
• 1tbsp tomato purée
• 2tsp ground coriander
• 2tsp ground cumin
• 1tsp turmeric
• 4cloves garlic
• 1in piece ginger
• 1chilli
• Low salt veg stock approx125 ml
• 2tsp olive oil

Method

Put all ingredients apart from veg stock,Tomato purée and veg stock into food processor and blend to a paste

Fry paste in a non stick pan for 5 mins , stir often as may stick

Add chicken chopped into mouth size pieces and fry in paste for a further 5mns

Season with a pinch of two of salt

Add Tom purée, and stock and cook for a further 15mns

Serve with cauliflower rice

    Substituted the Chicken with Pheasant, (got a friend who shoots, they are abundant around here.) This worked very well with it; I will certainly make it again.

    Delicious curry had with cauliflower rice with dry fried cumin seeds mixed in. Is on my recipe list for next week too.

    I added a couple handfuls spinach too. Served with cauli rice I spiced up with some turmeric and cumin…def a keeper!

    Had last night- Husband cooked it ( and is very fussy with his curries!) — We both loved it! Simple to whip up, low cal and most importantly very delicious. A recipe that we will continue to use even after I finish the 8 week diet 🙂

    Absolutely loved it, the curry was delicious, and I loved the cauliflower rice, I made half of the recipe,and I had half of that for my dinner, the other half is now in the freezer so I have a ready prepared meal at hand! And half of the cauliflower rice as well. I’m serching through the BSD recipe books now so I can make a variety of meals to do the same with.

    Loved this recipe. Needed to add some water to make the sauce a little more sauce like and was quite chunky, perhaps I didn’t blitz paste enough. Served mine with Bare Naked Rice and it was delicious. Thanks

    This was my fault as I should have read it, and I’m new to cooking but I did as directed and put everything in the food processor. Including the chicken. So I ended up with a lumpy sludge that was quite tasty but not as intended.
    Moral of story = Read to the end before starting 🙂
    I suspect it should say chicken in the first line as it says veg stock twice. Doh!
