Truffle-infused oil gives this a really satisfying meaty flavour.
• 1 Teasp. truffle infused olive oil
• 1 teasp. butter
• 1 small onion
• Good double handful of chopped mushrooms
• 3 eggs
• 20g grated cheese
• Splash of milk
Heat the butter and oil in a frying pan
Add the onions and mushrooms, cook until onions are soft.
Whisk the eggs with milk and grated cheese
Add the egg mixture to the pan and cook until the eggs are set.
I mix this rather than cook it as a conventional omelette, but then I'm really bad at omelettes!
