Easy, fast dinner of lunch
• 150g roasted buckwheat
• 1tsp coconut oil
• 1 medium onion
• 150g chestnut mushrooms
• 1tsp turmeric
Put buckwheat in pan, cover with boiling water, bring to boil, cover and simmer for about 15 min or until soft to your liking.
Fry chopped onion in coconut oil for few minutes, and turmeric and sliced mushrooms. If too dry add splash of water.
Serve onion and mushroom mix on buckwheat or mixed in. Add a gherkin if fancy.
