MUffins with ground almonds, cranberries and dark chocolate. Adaptable to own preferences
Ingredients
• • 80g butter
• • 12g sugar •
• • 115ml milk
• • 115ml yoghurt
• • 2 large eggs
• • 60g bran (wheat * has lower carbs)
• • 2 tsp baking powder
• • 220g ground almonds
• • 50g porridge
• • 70g dark chocolate drops
• • Soaked cranberries or Blueberries

Method
Soak cranberries and leave to plump up
OR
Defrost blueberries
Melt butter and sugar and leave to cool
Place all the wet ingredients together in a jug and beat to mix.
Add the cooled butter
Mix all the dry ingredients together in a large bowl.
Add the wet ingredients and mix well.
Divide between the cake cases
Bake for 15 – 20 minutes.
Freeze muffins when cold
