Balsamic Brussels Sprouts

Ingredients

• 500g Brussels sprouts
• 1/2 cup water or stock
• 1 tbsp EVOO or coconut oil
• 1tbsp balsamic or red wine vinegar (red wine is lower sugar, balsamic tastes better)
• salt and pepper

Method

Trim the Brussels sprouts and cut them in half longways. Heat your largest frying pan over a medium-high heat and cover the bottom with the oil. Put the sprouts, cut side down, in the pan. Fry them until the cut side caramelises--get them good and brown. Then tip in the water or stock and put a lid on, Turn the heat down to low, and cook until the liquid evaporates and the sprouts are tender. Toss the cooked sprouts in the vinegar, and serve warm or cold.

    Tweaked this a little by adding in a little garlic too – yum!
