Baked Harrisa Chicken

Spicy chicken with added goodies!

Ingredients

• 2 medium chicken breasts
• 3 tsp harissa paste
• 1 spring onion, chopped finely
• half small can of chickpeas
• pinch of pine nuts
• 1 cup of small cubed butternut squashServe with cauliflower rice and asparagus if you fancy.

Method

put chicken breasts, spring onion, chickpeas and squash in a bowl, add Harissa and mix until coated evenly. Place chicken into a shallow baking dish, add remaining mixture, sprinkle over pine nuts then baked covered at 180C for approximately 25 - 30 minutes or until the chicken is cooked and squash is soft.

Serve with spiced cauli rice and green veg.

Hint: this is quite dry - I may add a few tomatoes next time for some moisture so let me know how you get on!
