I think one of the easiest ways to ‘change’ your meals is actually to cook the same meals but just swap out the carbs. For example with bolognese instead of spaghetti make courgette spaghetti, spiralized courgettes. I use sliced greens beans or tenderstem broccoli as a base for Thai curry. You can use cauliflower rice instead of rice and I use mashed cauliflower a lot. I also eat a lot more green vegetables now.
I don’t know what ‘normal’ or ‘tasty’ meals are for you but really it’s just a case of leaving out the bread etc. Instead of root vegetables, potatoes, carrots parsnips etc. have green vegetables and salads. Sorry if that’s all a bit vague but it’s just a case of adapting what you enjoy, although not everything can be adapted!
