This soup is very tasty! It was quick and easy to make. I added some crushed garlic cloves and an onion to the version I made. I used Bouillon in place of a vegetable stock cube. I had “seconds” and have two further portions for my packed lunches! Thank you, Woobear45
Delicious summer or winter courgette soup that really fills you up
Ingredients
• 20g Butter 150 calories
• 400g courgette chopped 75 calories
• 400ml vegetable stock (Knorr stock pot) 60 calories
• 2 tablespoons fresh chopped tarragon

Method
Melt the butter in a saucepan, add the courgettes, then cook gently for 5 mins.
Add the tarragon and cook gently for a further 5 mins
Add the stock, bring to the boil, then cover and simmer for 15 mins
Blend until smooth
season to taste then reheat and serve with a sprig of tarragon
