avocado mash

Ingredients

• 1 small avocado
• 1/2 courgette
• salt - optional
• sunflower seeds

Method

- just cook courgette until soft
- mash avocado
- mash the two together (courgette might need draining a bit)
- add seeds and a little salt if you like

makes a creamy tasting 'mash' which I have with other veg and meat/fish
it is way quicker than other mash alternatives and there is no blender to wash :)
