This is easy to do. No one told me about the raw cauliflower smell, but my kids sure did. Besides that, we all at our veges last night.
Side dish or main with some extra veggies added
Ingredients
• 1cauliflower
• Seasoning
• A few flaked almonds
• 1tbsp unsweetened flaked or dedicated coconut
• 1 onion
• 2tsp extra virgin oil
Method
Put cauliflower in food processor and pulse till like grains of rice
Heat oven to 180c put cauliflower on tray with seasoning of choice
Cook 10-15 mins turning after 10mns
Meanwhile toast almonds and coconut in a dry frying pan
Set aside,then put olive oil in pan and fry chopped onions till golden brown
Add cooked cauliflower, almonds and coconut to onions , mix and heat through
