sweetheart cabbage lentil pilaf

Easy vegetarian meal, serves 2.

Ingredients

• 1 tsp coconut oil
• bunch of spring onions
• 1/2 of sweetheart cabbage
• 1/3 cup of green lentils
• 1/3 cup of quinoa
• 20g flacked almonds
• 1 tsp of garam masala
• chilli flakes to taste
• 1 clove of garlic if using

Method

Soak the lentils for 3-4 hours.
Fry chopped spring onions in coconut oil for 4 mins in a medium size pan, add sliced cabbage, fry for further 5 mins. Cook quinoa according to instructions on packaging. Add the soaked lentils to your pan including the water, season with salt and black pepper, add garam masala and chilli flakes if using. Cover and cook for 15 mins or until cabbage soft. When done take of stove, add crushed garlic if using and mix in the quinoa. Serve, hope you'll enjoy.

    How much water are you soaking the lentils in? Sounds good! Slice of grilled haloumi on top?
