Sun-dried tomato and bacon sauce with cauliflower bites.

a tomatoey chunky sauce with spicy baked cauli. You could add other lower carb veg if you wanted as well as other spices etc. Take out a slice of bacon and add cheese for a different taste.

Ingredients

• 3 slices bacon, chopped
• 1 small onion, chopped
• 1 garlic clove, crushed
• 1/4 cup tomato puree
• 2 pieces sun dried tomato, chopped
• cauliflower (I used 3 large florets, separated into small bite sized florets)
• fajita seasoning to taste (I used about 1tsp) (or seasoning of choice, any of the multi seasoning jars would do, or chilli powder, or paprika would be nice I think)
• splash of water
• tsp olive oil

Method

add the fajita seasoning, cauli and olive oil to a bowl and mix to coat. Put in an oven at 180c for about 20 mins turning half way through.

add the chopped bacon and onion to a non-stick pan and fry until almost cooked, then add the sun dried tomato and garlic, cook for another few mins. Then add the tomato puree with a little water to get your desired consistency.

that's it ready to munch.

    Have had this a few times. The sun dried tomato gives a great depth of flavour. Really tasty – a lot of bang for your buck!
