Stuffed Mushroom

Photo doesn’t do it justice! A quickly prepared, tasty lunch dish…. Vegetarians can omit the bacon.

Ingredients

• Serves 2.
• 2x large flat mushrooms.
• 25g ground almonds
• 15g chestnut mushrooms (about 2 mushrooms)
• 15g onion
• 15g celery
• 15g sweet pepper (red, yellow or green, whatever you have)
• 1 clove garlic, crushed.
• 1 rasher smoked, streaky bacon (optional)
• 20g finely grated parmesan
• salt and ground black pepper to taste. Chopped parsley.

Method

1. Oven at moderate heat. 180C.
2. Clean the flat mushrooms, removing the stalk.
3. Very finely chop the stalks and chestnut mushrooms.
4. Very finely chop the onion, bacon, celery and pepper
5. At moderate heat on the hob, sweat the bacon, onion and celery until soft.
6. Add the garlic, chopped pepper & mushroom and cook for a few minutes, stirring continuously.
7. Stir in the ground almonds, season and remove from the heat.
8. Spread the mix onto the flat mushrooms and sprinkle the grated Parmesan onto.
9. Cook for approx 15-20 minutes, until the cheese is melted & mushroom is cooked through.
10. a sprinkle of chopped parsley makes it prettier!
