Inspired by an Ottolenghi recipe that involved grilling courgettes for an hour, I adapted it to make a 5 minute supper with the same ingredients.
Would probably be quite good with a tomato added or on the side
• 150g courgetti
• 5 drained canned anchovies
• 10g pine nuts
• 10g grated parmesan
• 2 garlic cloves
• 1/2 teaspon of olive oil
toast the pine nuts in a dry wok or pan and put them to one side.
Heat the olive oil and stir fry the courgetti & garlic
Add the anchovies, and stir through until they are warmed through.
Add the Parmesan and pine nuts and stir through
good to go!
