I made this with boneless, skinless chicken thighs, simmering the meat in the sauce. Using 12 small thighs in total this recipe makes 4 servings of 3 thighs each so it comes to approx. 270 calories per serving.
I served it with egg noodles for the rest of the family, while I just had my usual pile of vegetables on the side.
Tasty and filling, and a nice change from the usual Italian style tomato sauce.
