Easy to make tasty and filling

Ingredients

• 2 eggs
• tablespoon chopped coriander
• teaspoon chopped chives
• half teaspoon turmeric
• half red chilli chopped
• thick slice of beefsteak tomato

Method

put all the ingredients in a frying pan over a medium heat and stir until cooked. Serve on top of the tomato
Delicious!

    I tried this for breakfast replacing the tomato slice for a fried portobello mushroom. To the egg mixture I added a splash of whole milk and salt & pepper. It was really tasty and very different for breakfast. It would also work well for lunch if you don’t think you can face chilli in the morning. My version will obviously increase calorie count… sorry!
