Tasty incredibly easy to make soup

Ingredients

• 1 fried onion
• 1 tsp curry paste of choice (tandoori is good)
• 1 can (about 450ml) coconut cream or milk
• 500g cooked carrots
• 500g cooked lentils, (fresh is best but canned work too)

Method

Blend as smooth or chunky as you like it, enjoy !

Note that using different spice pastes change the flavour tremendously, try as many as you dare, I have tried all sorts of mixes (home made) & all work, so far.

    ridiculously easy if you have pre-cooked red lentils frozen which I do. Just boil up the carrots and onion (I didn’t cook that separately) and I added half an orange capsicum as well. Then basically mix all together with the carrot etc cooking water. Cool, add coconut cream and bingo.
