Smoked haddock fillet with cheese sauce served on cauli-rice with onions, peas and spinach


• undyed smoked haddock/cod fillet
• 1 chopped onion
• bag spinach fresh
• handful peas frozen or fresh
• cauli-rice
• white sauce
• small amount grated cheese
• veg oxo cube


Oven bake fish in foil parcel with a small amount of milk. Cook peas and spinach separately as preferred. Fry onion in a little olive oil until soft. Add peas, spinach, cauli-rice, veg oxo cube and a little water to onions. Simmer for 5 mins. Make white/cheese sauce. Plate up.
