Simple lentil and tomato soup

Delicious soup easy and quick to make,

Ingredients

• 200 g dried red split lentils
• 400 g can chopped tomatoes
• 1 medium onion chopped
• 1 tablespoon of extra virgin olive oil or coconut oil
• 1 litre veg stock either homemade or
• stock cube made up with 1 litre water
• Seasonings of choice, I like bay leaf,
• whole peppercorns,
• paprika,
• sea salt,

Method

Put all ingredients into a large saucepan, bring to the boil and simmer for about 40 mins, stirring occasionally, if getting too thick add more water,
When the lentils and veg are very soft, remove bay leaf, then blend well until smooth, adjust seasoning and thickness,

    I really like this one. I split into Tupperware and then it keeps in the fridge 2-3 days.

    Some other hacks that make it even better. 1 tbsp Garam Masala added to the paprika.
    I personally find the flavours come out of the spices if they are fried with the onions
    A stick blender is just fine for this recipie

    A very easy soup to make. I feel that fresh tomatoes slightly roasted in an air fryer or oven will help to intensify the depth of flavour instead of tinned. I would also fry the onions off first just for flavour

    I really liked this recipe. So easy and quick to make. I didn’t use any extra seasonings – just salt, pepper and bay leaf. I did saute the onions first. And I added some grated parmesan to serve. Delicious.

    Absolutely delicious…
    I tweaked slightly as follows:
    Carton of tomato passata with chilli and pepper and a bayleaf
    Made it my soup maker.
