Shepherds Pie with Savoury Crumble

Shepherds Pie without the carby potato topping!


• 400g minced lamb
• 1 medium onion, diced
• 1 medium carrot, diced
• 1 tbsp. frozen peas
• Lamb stock cube
• 1 tsp dried mint
• Salt & pepper
• For the topping:-
• 50g gram flour
• 50g oat flour
• 25g butter
• 1 tsp mixed herbs
• Salt & pepper


In a non stick saucepan dry fry the minced lamb (there will be enough fat in the lamb), diced onion and carrot for 5 mins, breaking up the lamb as you go. Add 1 tbsp. frozen peas, a crumbled stock cube, tsp dried mint and salt & pepper, plus about a cupful of water. Cook on medium high for about 15 mins, until most of the liquid has cooked in. While that's happening, make the crumble mix - place the gram and oat flours (I just whizz up oats in the food processor to make the flour), the herbs and seasoning into a bowl, mix together with a fork. Melt the butter in a cup in the microwave, pour this into the flour mix and quickly stir round with the fork, until all the flour is coated and clumping together looking like big crumbs. Put the mince & veg into an ovenproof dish, spoon over the crumble. Bake in a medium hot oven for about 30 or 40 mins.
