A home made low carb alternative to a shop bought one. recipe makes 4 and they are around 250 or so calories.

Ingredients

• 400g diced pork (I chopped up loin steaks)
• 4 slices bacon
• 1 teaspoon mixed herbs
• 1 teaspoon of chilli powder (or to taste)
• 4 eggs

Method

boil eggs for 10 mins, shell them and set aside.

Meanwhile put all the other ingredients into a blender and blitz it.

prepare an oven tray with baking paper.

Take a quarter of the meat mix and flatten it in your hand, put an egg in the middle and use your hands to flatten the mix around the egg.

Pop them on the baking paper then in the oven at 180 for 20 mins turning once.

    No substitute for breadcrumbs?
    When I’m out and about I have M&S scotch eggs as pretty real sounding ingredients and good value. Much thinner “sausage” than others which I think, improves them. Stats don’t look too bad either ,
