Polenta “Chips”

Polenta (Cornmeal) fried or oven baked to replace the ubiquitous potato chip.

Ingredients

• 1 litre of stock (chicken or veg are my favourites)
• 2-4 tbl olive oil (don't waste extra virgin, it's for salads)
• 250g medium polenta (rather then fine or course)

Method

Three stages
1 - Boil the stock & oil, add the polenta in a steady stream as your beat furiously with a whisk (I use an electric one), it is volcanic, spitting & plopping by now so take it off the heat & beat till smooth. Pour it into a flattish tray (I use a loaf pan) smooth the surface with a spatula & allow to cool.
2 - Tip out onto a board & cut into fingers (I use a crinkle cutter) dry a little on a rack.
3 - Shallow fry or oven bake till crisp & golden.

    Easy to make taste delicious, would like to know what temp to oven bake. I have tried other polenta chip recipes before and this is the best.
