Poached Egg with Spicy Vege

A delicious breakfast of spicy mix of mushroom,tomato and spinach topped with a poached egg and a swirl of balsamic.


• 1 egg
• 1 medium tomato
• 1 large or 2-3 small mushroom
• 1/4 medium red pepper
• Chilli flakes
• A good handful of baby spinach leaves.


Chop the tomato, mushroom and capsicum into a small dice.
In a pan with a couple of tablespoons of water, place the diced vegetables and chilli and cook gently until tender.
Meanwhile in a pan of boiling water, patch the egg until done to your liking.
Just before the egg is cooked, add the spinach to the veges and allow to wilt.

Place the veges on your plate put the egg on top. Finish with a swirl of balsamic glaze.
