Peshwari style flatbread

Delicious flatbread with coconut and raisins. Fantastic for mopping up the curry sauce of your favourite low carb curry!

Ingredients

• (To serve two)
• 5 tablespoons of besan/gram flour
• 1 tablespoon of coconut flour
• Sea salt ( about three good grinds!)
• 30g unsweetened dessicated coconut
• 20g raisins
• 2 teaspoons coconut oil (for frying)
• 2 teaspoons butter (for frying)

Method

Preheat frying pan on medium high heat.
Mix the flours and salt together.
Add water and mix in well to make a thick, but 'pourable' batter
(If you have time here, leave batter to stand for a while, but it will still be OK if you don't)
Check frying pan is hot, then add one teaspoon of coconut oil and one of butter (the pan should be hot enough for the fats to sizzle and melt almost immediately.)
Pour in half the batter, swirl round if necessary to cover the pan.
Once it has started to set, sprinkle on 15g of the coconut and 10g of the raisins.
Gently check that it is set and firming up, and then with a fish slice, fold one half over like an omelette.
Move pan to a hot grill to gently brown the top (you can try turning them, but I find this easier, just be careful of your pan handle, if it's not heatproof!)

Slide out when ready.
Repeat for second serving.
I microwaved for a short burst to reheat them, but you could put them in a warm oven to keep warm.
Delicious with any curry meal.

    Not tried these yet but will Never mind mopping up curry sauce I would eat these on their own. They’d make a lovely brunch !!

    Hi, what is besan flour derived from? Is it low gi? Carb?

    Hi BedeBout, it’s made from chickpeas aka gram flour or chickpea flour.
