Orkney Oatcakes

Not a Scottish crisp oatcake but actually a yeasted oat pancake, best served hot either with a cooked breakfast or as a dessert.

Ingredients

• 1 tsp dried yeast
• 1 tsp heather honey
• 1 cup tepid whole milk
• 1 egg
• 1/2 cup rolled oats
• 1/2 cup wholemeal flour
• 1/2 cup plain (or Greek) yogurt

Method

Whisk the yeast & honey into the milk & set aside for about 15 minutes to froth. Beat the egg & add to the yeast mixture adding the remaining ingredients to the batter, whisk really well then allow the mixture to rest for a further 15 minutes before making the pancakes in the usual way, cook till just golden before turning.

    These sound delish! Is there any way you could get the calorie and carb content for these?

    Yes carb and calories would be good ,think these could satisfy mine biscuit craving with a couple of coffee.
