Not a Scottish crisp oatcake but actually a yeasted oat pancake, best served hot either with a cooked breakfast or as a dessert.
Ingredients
• 1 tsp dried yeast
• 1 tsp heather honey
• 1 cup tepid whole milk
• 1 egg
• 1/2 cup rolled oats
• 1/2 cup wholemeal flour
• 1/2 cup plain (or Greek) yogurt
Method
Whisk the yeast & honey into the milk & set aside for about 15 minutes to froth. Beat the egg & add to the yeast mixture adding the remaining ingredients to the batter, whisk really well then allow the mixture to rest for a further 15 minutes before making the pancakes in the usual way, cook till just golden before turning.
