Warm for winter meals, quick and easy, high fiber.
• 4 oz kielbasa sausage of choice
• 2 c chicken broth
• 1 can cannellini beans, rinsed
• 1 can diced tomatoes, with or without jalapeno or diced chile (as in Ro-tel if you want more spice/kick)
• 1 can French cut green beans
• Black Pepper
In a cast iron skillet cook sliced kielbasa until edges are crispy and browned. set aside.
To the same skillet, add chicken broth, tomatoes and both kinds of beans. Season as desired.
Add back in the kielbasa and warm through. Since all ingredients are already cooked, this only takes a minute to warm through. I let it simmer until the chicken broth intensified and the liquid was absorbed.
Optional - Consider adding green cabbage as well.
