num num num a healthy version. serve with cauli-rice or salad, and leave off the cheese if you need to keep the calories lower. It works out around 270 cals per portion (add more for cheese if you use it) and 23g carbs approx.

Recipe serves 4

Ingredients

• 4x chicken breast
• 4 slices of ham (or bacon)
• 1 carton passata
• 1 teaspoon chilli powder (or to taste)
• 2 onions
• 4 tablespoons red wine vinegar
• 2 tablespoons soy sauce
• 4 tablespoons sweetner
• dash of olive oil

Method

Wrap the chicken in the ham or bacon and add to a deep oven dish, pop in the oven at 180 for 15 mins.

Meanwhiles cook the onion in the olive oil in a deep fry pan or other nonstick pan. Once softened add the chilli powder and cook for another minute.

Add the passata, vinegar, soy sauce and sweetner and allow to reduce down for 5 mins as you don't want it to be too runny.

Once ready pour the sauce over the chicken and cook in oven for 15 mins, adding cheese 5 mins before the end if you are using.

    this was really delicious .. the sauce was easy to make.. quick to prepare, we really enjoyed it

    Really nice. Made full amount of sauce and will do the two of us another time.
    We had it with some leftover ratatouille with cauliflower mash topping – as OH said just like real food.
    I will definitely make it again.

    Easy recipe to make and delightful to eat. Even the children enjoyed this. I had mine with colliflower rice. One word awesome and I feel full.
