Harvest Vegetable Pie

A very hearty large meal at under 14g carb per serve.

Ingredients

• 250g cauliflower
• 2 tspns butter
• 50g grated cheese
• 100g tinned butter beans
• 50g leek
• 50g parsnip
• 50g carrot
• 35g mushroom (= 2 medium)
• 60g sweet potato/ kumara
• 3 tspns gravy powder
• 1 tspn sweet paprika
• 1 tspn sage
• 2 tspns tomato concentrate

Method

Chop cauliflower and boil until tender.
Mix gravy powder, tomato concentrate, paprika and sage with approx 200 mls water. Set aside.
Chop all the vegetables and divide evenly between two oven proof dishes. Divide the butter beans between the two dishes and mix through the vegetables.
Pour the gravy mix over both dishes of vegetables. Cover with cling film. Microwave each dish separately for approx three minutes. Veg should be tender and gravy have thickened.
While these are cooking, drain and mash the cauliflower. Add the butter and grated cheese and stir thoroughly. Season to taste.
Put half the cauliflower mash on top of each of the vegetable dishes.
Place in a hot oven, or under the grill until the mash is lightly browned on top.

    I absolutely loved this – Fantastic dish and so easy to forget that it is part of an 800 calorie per day diet. Very satisfying.

    Lovely and satisfying. I made it all in a le creuset and baked in the oven (except the cauli).
    Less washing up and no microwaves 🙂

    My husband and I both loved this recipe…
    Turned out well and very tasty..
    I made it all in an electric frypan then put the single serves in little erratic dishes covered the cauli top in cheese and put under grill till brown.
    Then i separated all the rest into single serves and froze them for nights when I just want to defrost and eat..

    Great!!

    I put half in the freezer (minus the cauliflower). We both really enjoyed the meal. I think I put a little too much cauliflower on top, I did go over the quantity in the recipe but will remember that for next time. Lovely thank you.

    I served this in individual serving dishes and popped into the oven to crisp the cheddar and brown the cauliflower a little. Absolutely fantastic dish. There were no leftovers. 🙂
