Fried eggs in peppers

Simple, super-healthy, cheap and low-carb. What more do you need?

Ingredients

• 1 bell pepper (your choice of colour)
• 1 tsp olive oil
• 2 eggs
• Salt and ground black pepper to taste
• Shake of herbs/spices to taste (optional)
• Bag of rocket, to serve*

Method

Cut the top and bottom off a bell pepper. Strip out any remaining seeds and white bits and cut the rest of the pepper in half to make 2 rings.
Add the olive oil to a frying pan and put on a low/medium heat. Add the pepper rings to the pan narrow end up and fry for a couple of minutes. Flip over.
Break the eggs and drop one into each of the pepper rings. Season with salt, pepper and herbs/spices. Keep on the heat until the egg is done to your liking and scoop the whole lot onto the rocket.
*You can also use watercress

Note: It can take a while for the eggs to set if your pepper is deep rather than wide.

    Very tasty. I served with spring greens and broccoli for extra nutrition.
