So tasty, I can’t wait to have it again!
Ingredients
• 2 pieces of your favourite fish
• Butter, 2 teaspoons
• 1/2 small onion, diced
• 1 small slice of ham/bacon, diced
• 20g breadcrumbs
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried sage
• 2 tablespoon Lemon Juice
• 1 small egg, beaten
• 1/4 cup white wine
• 20g any nuts (macadamia, cashew, almond)
• salt & pepper
Method
Cook onion and dried herbs in 1 tsp butter until translucent. Place breadcrumbs and nuts in a food processor and process until mixture resembles coarse breadcrumbs. Add half the onion mixture, 1 tbsp. lemon juice, ham and egg, and process until combined. Season with salt & pepper.
Pre-heat oven to 180 degrees C.
Line baking tray with baking paper. Lay fish out and cover with the nut mixture. Drizzle each piece of fish with a small amount of wine. Place tray in oven and bake for 15 mins.
Meanwhile add remaining wine, butter and lemon juice to the remaining onion. Cook on medium high until the onion is just starting to crisp.
After 15 mins in the oven, turn the oven to fan forced and cook for a further 5 mins or until the crust is crispy to your liking. Pull out and check with a fork at thickest part of fish. If cooked, dish onto plate and decorate with onion mixture.
