Eggs and avocado

A delicious way to have a whole plate of food for breakfast with all the good nutrients to set you up for the day.

Ingredients

• Spinach, rocket or other green leaves (handful)
• Cherry tomatoes (a few)
• Avocado (half, sliced thinly)
• Eggs (2)
• Rapeseed oil spray

Method

1. Place a handful of spinach and some sliced cherry tomatoes in half on the plate and drizzle with a little extra virgin olive oil
2. Slice the avocado thinly and arrange nicely on the plate
3. Spray a non-stick pan with a few squirts of rapeseed oil
4. Heat the pan to medium and fry the eggs (eggs could also be poached or scrambled if preferred)
5. Season everything with salt and pepper

    I did a slight variation on this in that I roasted one large tomato with a teaspoon of olive oil, steamed the spinach (well microwaved it actually!), poached one egg and used a whole, but very small advocado (which I weighed). Had for ‘brunch’ and yes, came in at around 400 cal. Very satisfying! (Oophs – should have taken a photo).

    Lovely recipe I had this for my tea. I poached the eggs and threw a dozen green beans on for good measure. Thank you Wonderwoman!
