Egg in a cup

Very simple but delicious breakfast or lunch recipe. Easy, tasty and everyone likes eating out of a cup no?!

Ingredients

• 1 large egg
• teaspoon of rapeseed oil (or olive oil)
• handful of spinach leaves
• 30g of smoked salmon
• 1 large flat mushroom
• Salt and pepper

Method

Boil an egg...

While said egg is boiling, put the oil into a very hot pan, chop the mushroom and add to the oil. Let the mushroom cook undisturbed for 2-3 minutes.

Wash your spinach (even if it doesn't need it as the water it retains will help to steam and wilt it. Add to the pan with the mushrooms, season as required.

When the egg is ready, remove the shell, put into a mug. rip up the smoked salmon and put in the cup with the egg.

Once the spinach has wilted nicely, add to the cup with the mushrooms and then get a knife and chop it all up together...

Eat!
