Easy baller summer salad

This is a simple summer salad combining fruit and veg. It is sweet, zesty and refreshing – perfect for a summer bbq party:)

Ingredients

• 150 g mozzarella pearls
• 1 avocado
• 1 papaya, seeds removed
• 1/2 cantaloupe, seeds removed
• A piece of cucumber (about 20 cm long)
• Salt and pepper to taste
• For the dressing:
• zest of 1 lemon,
• 1 tablespoon finely chopped fresh mint,
• 2 tablespoons good vegetable oil,
• 3 tablespoons lemon juice

Method

Do not peel the fruit and vegetables. Using a melon baller scoop out sphere shaped pieces of the fruit and vegetables. You should have a more or less equal amount of each ingredient. Combine, drizzle with the dressing, season and serve.
