Devine Stuffed Capsicums

Deceivingly filling and full of different flavours

Ingredients

• 1 large red capsicum
• 80g diced chicken breast, cooked
• Slice of red cabbage
• Slice of red onion
• 2 cherry tomatoes
• 1/2 slice ham, diced & cooked
• 1/2 clove of garlic
• Sliced mushroom
• Sprinkle of Parmesan cheese
• Pinch of coriander
• 1/2 chopped shallot

Method

Leave capsicum whole or slice in half. Stuff with all ingredients with mushrooms and cheese on top.

Place in oven at 180 degrees for 45 minutes. No need for oil.

Can serve with tabouli or your favorite side dish.
